So here is a simple way (especially for bachelors) to have a healthy breakfast (and for those who are willing to spend a little time in the kitchen) – Bread Sandwich with potato, tomato, beans, and capsicum filling.
I have made this many times and I thought to share my recipe with you. To make it more healthier, you can try using whole wheat bread or oats bread as it adds flavor to the dish. You can buy sandwich bread which is usually available in stores, but some of them are made with maida.
Here are the ingredients to serve four (4) people :
- Potato (2)
- Tomato (1)
- Beans (a few in number)
- Onion (1)
- Capsicum (1/2)
- Sundrop oil
- Red Chili powder
- and Salt for taste
Step 1: Wash the potato, tomato, beans and capsicum and peal off potato. Chop the potato nicely into slightly larger pieces. It is better to have slightly larger pieces as in the latter stage, it will get reduced to the right size.
Step 2: Chop onions nicely into smaller pieces, chop tomato and capsicum into medium sizes.
Step 3: Boil potato and beans thoroughly. Note: potato tend to boil quickly so, if they are done and if you find beans are half done, its okay to take it out. Best thing is to keep in a pressure cooker and cook as it is a faster and quicker way to do it.
Step 4: Roast the bread slices either using ghee or butter and keep it ready. (Psst: Making it with ghee is more delicious!)
Step 5: Put the tawa on the burner, pour oil and keep it at minimum heat.
Step 6: Once the oil is hot, first put mustard seeds and jeera into the oil. Then add in the chopped onion, tomato and capsicum.
Step 7: Add a pinch of Turmeric powder, and based on your taste add red chili powder and mix it nicely.
Step 8: Once it is nicely cooked and onions turn into golden color, add the boiled vegetables. Note: If you don’t want to use red chilli powder you can also use green chilies. Take two green chilies and chop them into two pieces. Add it while you add the onions into the tawa.
Step 9: Add salt to taste and mix it nicely. All the while, keep the burner at low flame so that you don’t overcook the masala.
Step 10: Take it out, put the masala into a slice of bread and serve it. That’s it!
It is quite easy to make and very healthy. You can replace the vegetables I have mentioned here with any other. It will have a different taste but still will be delicious.
